The Race for Summer...
by Chris IdsoIn the blink of an eye, we are thrust into summer.
This season yields some of my favorite produce to work with, like hyper-sweet corn, fresh peas, juicy peaches, and endless varieties of Chino Farm heirloom tomatoes.
The summer menu inspirations are a direct result of this summer bounty and translate into gastronomic enhancements for our fresh seafood at Pacifica Del Mar. Look for changes in preparations to our Scallops, Northern Halibut, and Swordfish entreés.
My favorite seasonal addition is a tasting of those succulent tomatoes with a basil buttermilk dressing and an aged Haystack Mountain goats milk cheese. There is also sweet bisque made with a silky purée of white corn and leek. For dessert, my top pick is our almond tart topped with fresh cherries and peaches macerated in Amaretto and served with almond gelato.
As fast as summer comes, like a galloping racehorse... it reaches the finish. Make sure to take advantage of Pacifica's fresh summer menu before it ends!
